Sarsyadong Dalagang Bukid
It is a classic Filipino comfort food, blending Spanish culinary influence (sauces and sautéing) with native ingredients.Traditionally made with fried fish (often tilapia, bangus,dalagang bukid or galunggong), and then simmered in a tomato-based egg sauce.
"Sarsyado" comes from the Spanish word "salsa", meaning sauce. “Sarsyadong Isda” literally means “Fish with Sauce.”
Ingredients:
Isda Dalagang Bukid 1/2 kg.
Tomatoes 2 pcs.
Garlic 3 cloves
Egg 1 pc
Pepper
Salt
Cooking oil
Steps in cooking:
1. Heat a pan and fry all the fish until golden brown.
2. Using the same pan, gently sauté the garlic until fragrant, then add chopped tomatoes and cook until they begin to melt and become a light base sauce.
3. When the tomato mixture reaches a saucy consistency, add a small amount of water and slowly add the beaten egg while stirring. Simmer until the egg sets and the sauce slightly thickens.
4. Once simmer add some salt and pepper to taste.
5. Taste and adjust seasoning as needed. Carefully add the fried fish back into the pan and simmer gently for 5 minutes to finish.
6. Finish by turning off the heat after 5 minutes of simmering,it’s done and ready to serve hot.
